We regard work in the vineyard and work in the winery as two parts of one whole. As a result,
one single person conducts these two – Paul-Emmanuel Boulmé.
Our winery was renovated in 2017. Work there is in line with work in the vineyard: systematic
single parcel management in small vats in order to express our terroir’s variety; indigenous
yeasts as a rule, extremely limited inputs, individualized ageing for every parcel and vintage,
barrel only for oxygenation and aromatic complexity, no filtering or splicing.
We want to trace the purest line from vine to bottle.
